Fresh Fish Fanfare

Posted Aug 12 2009 10:46pm
There's been much ado about fish in our household lately. It all started on our boat trip, with an unrequited love between C and a fish that we dubbed "Big Brown." The fish taunted C all week long, performing what seemed like a mating ritual of some sort, jumping and splashing directly next to C's unbitten fishing line. I bought some fresh, local, and organic rock cod the week that we returned to San Francisco as a sort of consolation, but somehow, it just didn't taste as great as C imagined Big Brown would have.

Luckily, on another type of fishing trip in a completely different body of water, our cousin scooped up 18 fish, some rock cod and some red snapper. He caught so many that he had to give some away. So many fish, in fact, that he had to grill them up whole and treat C and I to a fabulous fish dinner not once, but twice last week. If you've never had whole grilled rock cod before, you've been missing out. The white fish is flaky and flavorful, but not at all oily or "fishy." Plus, it's pretty simple to prepare. This guy is stuffed with rosemary, thyme, parsley and a teeny bit of dill, then wrapped in tinfoil that's greased with butter or olive oil and grilled for 25 minutes or so. What's your favorite way to prepare fresh fish?
