Our fridge was looking pretty sad a few days ago. Somehow, I managed to find some nearly wilted chard, feta cheese, katamala olives, and garbanzo beans. I sauteed them all with a little olive oil and some white wine vinegar and had lunch. It was delicious. If I was making this for more than one person, or for a dinner, I would probably add some ahi tuna or grilled chicken. Pine nuts would be good, too. What about you? What's your best concoction from low-inventory fridge scrounging?
