Occasionally, something that I don't recognize shows up in our veggie box. Two weeks ago, it was pea shoots. Amazing little green sprouts that taste like peas, and well, spring. We threw them in with spinach, radicchio, red onion, and a tasty mustard vinaigrette. For you non-veg people, we also added bacon, which I have not pictured here in a painstaking effort to be more vegetarian friendly. I would add a recipe, but honestly, I think you can handle it without one.
