There are a lot of things I can say about gluten free bread. Most of those things are not very nice. In fact, I attended a gluten intolerance meeting last night where many lamented the brick-like qualities of certain GF bread brands. (More on that meeting later). But, I'm trying to keep it positive these days, so the only thing I'll say in this post is that gluten free bread is amazing for toasty, melty sammies. Somehow, toasting the bread in the toaster and then again in the broiler just adds a little something that makes me forget all of my gluten free bread complaints.
For this tuna melt, I used Whole Foods' gluten free sandwich bread. I added carrots, onions, dill, basil, mayo and mustard to the tuna, sprinkled some cheddar and Monterey jack cheese and salt and pepper on top, and broiled the sandwich. Once it was melted and smelled delicious, I added a sliced heirloom tomato and a few slices of lettuce from my garden. Makes for a very simple gluten free lunch solution.
