I may have said this before but I GET SO EXCITED about berry season!!! Blackberries were $1 this week and so big and sweet. Yum. I couldn’t pass them up. I bought two containers. Scarlet and Braiden demolished one and I hid the other for dinner.
This meal is so simple and so fresh.
2 Turkey Breast Fillets
2 Tbsp Coconut Oil
Salt, pepper, paprika to season the turkey
3 cloves of garlic
1 Tbsp Sweetened only by fruit Blackberry Jam
1/4 Cup Blackberries
A big handful of fresh Cilantro
A little bit smaller handful of fresh Parsley
1/2 fresh jalapeno (or to suit your taste)
2 Tbsp Lemon Juice
2 Tbsp Lime Juice
Salt and Pepper
I seasoned the turkey breast on both sides with salt, pepper, and paprika. Then in a hot pan I melted the coconut oil and brown the turkey on each side. You can either turn down the heat and cook the turkey all the way through or you can put it in the oven. Yesterday I was not going to turn on the oven because it was a beautiful 70 degrees out and I didn’t want to waste the energy and make the house hot. Anyway, in a food processor place all ingredients for the sauce and blend. It’s that simple. It taste great cold on the warm turkey and the sweetness is amazing on the savory meat. Fresh, Healthy, Easy and DELICIOUS!
