Tomato, Zucchini, Mushroom Pasta with Parmesan

Warning: This makes A LOT of pasta. Last night it was just Josh and I so I wanted to make something quick, easy, and delicious.  This pasta fit the bill.  I used whole grain pasta, threw everything together in a pan to simmer.  It took me less than 30 minutes, skip ordering the pizza and make this instead!   • 2 Cans Diced Tomatoes (I used the kind with garlic which made this pasta even better)
  • 2 Zucchini’s (or one large) cut in half and sliced
  • 1 Big Container Mushrooms, stems removed and sliced
  • 1 Cup Red Wine Vinegar
  • 1 Tsp Oregano
  • 1 Tsp Italian Seasoning
  • 1 Tsp Tarragon
  • 1 Tsp Basil
  • 1 Tsp Red Pepper Flakes (Optional)
  • 1 13.5oz box of Whole Grain Pasta
  • 1 Cup Grated Parmesan Cheese

In a pan put Diced Tomatoes (don’t drain), Zucchini, Mushrooms, Vinegar, Spices.  Let simmer for about 15 minutes until vegetables are cooked through.  Make the Pasta as the package says.  Toss the sauce and pasta together and then toss with the parmesan cheese. Done!
