I woke up this morning barely able to get out of bed due to massive amounts of pain in my knee. The previous night before I had written my post , I hit the treadmill for a run. After 2 miles I felt an ache in knee but I kept pushing and finished 4.5 miles. Since I wanted to run 6 miles, I decided to hop onto the elliptical to finish my workout…NOT SMART SARAH. So I’m paying today for the mistakes of last night. I hobbled around all day today: struggling to bend my knee and walk up stairs. By the time I left work, my knee felt better and I had begun to think I could handle a simple elliptical workout. However with the help of my (tough) loving mother, I decided to rest my knee. And I took it one step farther to indulge my inner diva and got a relaxing pedicure while reading a fantastic book: by Victoria Moran (highly recommend). I browsed the library for a little bit (I love books) then headed home to make dinner.
May I present Egg-celent Southwestern Spaghetti Squash:
While roasting my spaghetti squash in the microwave , I sauted chopped onion, mushroom, spinach, and 1/2 cup liquid egg whites on the stove. I mixed together the egg mixture and spaghetti then topped my entire concoction with salsa. Kinda ugly and kinda weird but super yummy!!
Did I feel guilty for not going to the gym today? Yes but I’m slowly realizing that missing a workout to heal my body will keep my body healthy and fit. Taking care of myself is becoming a priority. On that note, I’m off to read with a cup of tea then early bedtime!!
