No Bake Peanut Butter Date Energy Cookies

Hey everyone! It’s Thursday if you weren’t aware.

Yesterday’s training: 1 hour elliptical.  I’m taking a break from running until my long run Saturday.

So, I have kind of a confession to make.  It’s about my secret project.  I’ve never been good at keeping secrets.  I’ve been working on a project to change my thought process, to change my life, and to lose weight. (Without any sort of dieting.)  I’ve been forcing myself to deal with all my emotions and I really feel myself changing. I’m really enjoying this process and I hope to change other people’s lives as well as my own.  This project involved a lot of emotions and a lot of videos.  I will launch the whole program after I go through it.

Exercise is not my problem… I run and workout a lot.

Food is not my problem.  I know what is healthy. So why haven’t I lost weight? (My weight went down then back up)

My emotions are the problem.  My thought process is the problem.

I’ve come a long way from the girl I once was. I no longer have an eating disorder but I, like many others, still have a ways to go.  I accept myself how I am but I also have more I want to accomplish in life.  Changing the way I think is how I’m going to move forward with every aspect of my life.  Not just weight.  Weight really isn’t that important.

Anywho…. I hope you guys stick with me as I go through this and soon you will see the final results.

Now… Speaking of food. (Were we speaking of food?)

I wanted something sweet yesterday (like every day.)

I wanted something that wouldn’t weigh me down and instead give me energy.

I wanted something that I didn’t have to cook since it was in the 90′s again.

So that is how my No Bake Peanut Butter, Date, Energy Cookies were born.

These babies are gluten free and whole grain.

Super super simple.

  • 10 Dates pitted, chopped
  • 1/2 Cup Quick Oats
  • 1/2 Cup Brown Rice Flour
  • 1/2 Cup Peanut Butter (Natural is best)
  • 1/2 Cup Vanilla Greek Yogurt
  • Mix together in a food processor (or ninja.)

    Roll into 12 balls and enjoy!  These are really good and kind of addicting. I kept them in the fridge.
