Greek Quinoa

If you haven’t noticed yet… I love quinoa. It’s so good for you and so versatile! I’ve made Asian, Mexican, cheesy, Italian, and now… Greek. So simple and I loved it.


  • 2 Cups Cooked Quinoa
  • 1 Small Jar Cocktail Onions, Drained
  • 4 Pepperoncinis
  • 1/4 Cup Sliced Black Olives
  • 1/4 Cup Sliced Green Olives
  • 1/3 Cup Red Wine Vinegar
  • 2 Tbsp Capers
  • 1/4 cup Feta Cheese
  • Mix together everything together and top with the feta cheese.  I added chicken to ours but it would be really good with some sliced up no filler salami in it.
