Eat Repeat, Get Flexible, and Mary

Quote of the day:

Nothing can stop the man with the right mental attitude from achieving his goal; nothing on earth can help the man with the wrong mental attitude.

- Thomas Jefferson

Good morning!

I’ve been in repeat mode when it comes to breakfast and lunch.  I really should switch it up but right now it’s easy and I love it.  I’ve been having a bag of single serve popcorn EVERY night too.  I miss my Reese’s Pieces I used to always put in but I love popcorn in general. For breakfast I’ve been having Cheerio type cereal with unsweetened almond or coconut milk.  For lunch I’ve been making Fajita Salads. I’ll probably have another today.

I cook one whole pepper and one whole onion with a sprinkle of Chili powder, Cuman, Paprika, and Garlic powder. First, I cook them in a non stick pan until the house fills with smoke. I mean, until they get some grilling marks… but seriously the house fills with smoke almost every time. I’m terrible at watching my food carefully.  Then, I add a little water and let it boil out.  This makes the vegetables soft like I like them.  Then I add the spices and slide them on a bed of lettuce.  I top with salad dressing and hot sauce.

My current favorites are the Bolthouse farms dressings. You get them in the produce aisle.

And of course FRANKS REDHOT Original Sauce!

I’ve also decided to take Fitting-it-all-in’s Flexible February #flexiblefeb.  It’s a 4 week challenge to stretch 60 minutes a week.

Yesterday I read the news about Hugh Hefner’s Secretary, Mary passing.  I love “trash” tv and have seen every episode of, “The Girls Next Door.”  Mary was so sweet. She sure did live a life!
