Daily Eats: Regular Routine

I was back to reality yesterday. The land of fresh green grass and pure white bunker sand was sharply calling my name at 6 am. Yes, I sadly had to go back to work after my unexpected vacation. But first, I had breakfast :) I made a bowl of oat bran with milk and topped it with a sunny side up egg and a light life breakfast patty.

On the side, I had a very rip banana that had been hanging in my purse for days :) Once again, this breakfast was filling and delicious.

I begrudgingly made my way into work and got busy with a huge pile of mail and to do’s. Around lunch time, T asked if I would be in the mood for sushi and, of course, my answer was yes! She had a few errands to run so she picked some up from Ukrop’s for us. I had a veggie spring roll

and a dynomite roll. This roll features fresh spicy tuna, crab and avocado. I always add a little soy sauce and rooster sauce to make it complete.

After lunch, I got back to work on all of my piles and finally broke for a snack just before go time. I had some low sodium cottage cheese with mixed fruit to tide me over until dinner.

Once I arrived home from work, I did the 20 minute lunar flow # 1 from yoga download. My anxiety has been getting really out of control these days and I feel certain is because of my lack of yoga. This class was calm and soothing and it was perfect to calm my nerves and relieve the stress of the day. 

After my yoga session, I made a quick dinner for the DH and I. Mustard glazed salmon with broccoli and cheese was on the menu

along with simple salads with oil and vinegar. I have been playing around with cooking times on the salmon and think that this was the perfect one; 12 minutes.

For dessert, I had this peanut butter fudge truffle from The Chocolate Spike that we purchased on our trip to Blacksburg. It was rich, creamy, fudgy and had a mild peanut butter flavor. Mmmm….truffles :)

I’ve been wondering lately, how many blogs do you read and/or comment on daily?  I subscribe to about 35 blogs in my google reader and about 20 of those update daily.  I typically read everyday but sometimes miss a day or two when I am busy like this past weekend.
