After making some delicious Mexican Hummus I discovered that I was out of carrots. Boo. How was I to eat this amazing hummas I just slaved over the blender for? By making an amazing Salad, that’s how.
1. In a hot pan melt the Coconut Oil.
2. Add in the black beans and corn and cook until they are blackened. Move them around constantly so they don’t really burn.
3. Place salad fixings in a bowl, top with corn and bean mixture. Toss with hummus and salsa.
4. I added Lime Juice on top of mine. It was great.
