This is one great dish if you like spicy! I LOOOOVE spicy food. This is by far the simplest recipe for a quick healthy, spicy lunch.
1. Bring to a boil the quinoa in 2/3 Cups of water. Turn heat to simmer and cover for 15 minutes.
2. In a separate pan, medium heat, melt the coconut oil. Saute the onion, pepper, and chicken until everything is cooked through (about 5-7 minutes)
3. Once quinoa is cooked add the vegetable and chicken mixture to the quinoa.
4. Add in hot sauce, ranch, and pepper.
