would a routine blood serious determine if there was a serious problem with the liver or pancreas?

depends what your doc considers to be "routine blood work" .  Liver enzymes are usually checked if you are on meds long term for cholesterol (or other med that might affect the liver).  The most common liver tests are ALT, AST, and alkaline phosphatase as well as bilirubin tests.  The tests for Pancreatic function are amylase and lipase - not routinely done unless you present with abdominal pain and could possibly be normal in the presence of a tumor.  These tests look at the "function" of the organ only.
