Turnip Greens And Beans

I love the combination of greens and beans. While I eat a lot of fruits and vegetables, I don’t eat nearly the amount of greens that I should. I read somewhere that for optimal health you should make sure you eat a huge serving of greens every day. Beans and greens is such a simple, inexpensive dish to make - and it’s so healthy! It’s a great side dish, but I love to eat it as a full meal. It leaves me perfectly satisfied and content.

Turnip Greens And Beans
Ingredients
2 slices bacon, chopped (go for the healthier uncured bacon by Trader Joe’s or Applegate Farms, etc)
1 onion, chopped
a 20oz bag of frozen turnip greens (or spinach, or mustard greens, or collard greens, etc)
1/2 cup water
a can of beans (cannellini, pinto, kidney, etc) drained and rinsed
pinch of cayenne pepper
salt and pepper to taste

In a large pot over medium low heat, cook bacon pieces until crispy. Add onion and cook about 5 minutes until translucent. Add the bag of frozen greens and water. Cover and let cook until the greens are no longer frozen and heated through. Add the beans, cayenne, and season with salt and pepper.

Makes 4 servings.
