Spring Greens Soup

Whenever spring rolls around, I love a good spring greens detox soup. I make a big pot of it and eat it for a day or two for some internal cleansing. Spring cleaning should not be just for your house and closets, but for your body too. I know for myself, during the winter months, I tend to eat heavier with more meats, cheeses, baked goods, alcohol, etc. So it’s nice to lighten up when the weather starts warming up. Greens are full of nutrients, fiber, anti-oxidants, minerals, and are low in calories. By making a big soup out of them, I’m also fully hydrating myself with liquid. Every spring I really look forward to green soup. They’re super easy to make and very versatile also. Just pick 5 or 6 or 7 green vegetables and herbs, simmer them in a big pot of water until soft, then puree. I’ve yet to have a combination that didn’t taste good. Here was the recipe that I made last week:

Spring Greens Soup
Ingredients
3 green onions, chopped
1 leek, sliced
4 stalks celery
3 small zucchini, chopped (about 2 or 3 cups)
1 bunch kale, chopped
1 cup fresh parsley, chopped
1 tsp dried tarragon
1 tsp dried basil
1 tsp dried dill
1/2 tsp dried thyme

Clean and chop all vegetables, put in a big soup pot and fill with water. Bring to a boil, then reduce to a simmer. Simmer for 1 hour until veggies are soft. Puree in a blender, food processor, or right in the pot with an immersion blender.
