I made this Three Bean Salad a few weeks ago and it was so good! Unfortunately, I forgot to write the recipe down as I was making it. I was just kind of experimenting and throwing things together. So I don’t know if these were the exact measurements, but they’re a good guesstimate.
SCD Three Bean Salad Ingredients
3 cups frozen haricot vert (or green beans)
1 can black beans, rinsed and drained
1 can red kidney beans, rinsed and drained
1/2 cup apple cider vinegar
2 TB honey
1/4 tsp granulated garlic
salt and pepper to taste
Steam or cook haricot vert in boiling water for about 5 minutes, until just starting to get tender. Cut into 1″ pieces. Combine haricot vert with black beans and kidney beans. Add remaining ingredients. Stir to combine. Cover and chill. The longer it marinates in the refrigerator, the better the flavors combine.
