When the days get really hot and humid, I like to eat cold and light. I’ve never been a fan of mayo so typical cole slaw made with a heavy mayo dressing has never been a favorite of mine. I came across a recipe for Asian Slaw not too long ago and all of the ingredients were SCD legal. I made it a few times, tweaking the ingredients a little bit each time until I had something that I really enjoyed. It’s tangy and sweet and just a little bit spicy from the ginger. Here it is:
SCD Cole Slaw - Asian Slaw Ingredients 1/8 cup apple cider vinegar 1/4 cup honey 1 tsp sea salt 1/2 tsp pepper 2 TB sesame oil 1/2 tsp ground ginger (or 1 tsp grated fresh ginger if you have it) 1 package coleslaw mix 3 scallions, thinly sliced 1/4 cup sesame seeds, toasted (optional)
In a large bowl with a lid, combine vinegar, honey, salt, pepper, oil, and ginger. Add coleslaw mix and stir to combine. Add scallions and sesame seeds, and stir to combine. Chill. Serve cold.
