PB & J Fruit Pizza! GF, V, SCD!

Hey Happy Tummies!

It’s MARCH!!! Holy cow! When did this happen?! I’m not complaining:) I will welcome the day when spring is here!

That day is not today though…Here in NYC, we’re bracing ourselves for a snow storm! So I thought…what a perfect opportunity to whip up something sweet and delicious in the kitchen!

Sooooo….I made a FRUIT PIZZA!!! A spectacular grain-and-sugar-free cookie base, topped with an almond butter and banana frosting, with a strawberry drizzle! Talk about a yummy break from the storm!

And it’s gluten free and Specific Carb Diet friendly with a Vegan option!

Here’s what you need: (Serves 4 for dessert, 2 for a meal)

¾ cup almond flour
2 egg whites (Vegan option: 2 flax eggs)
2 “droppers full” of pure liquid stevia (SCD use 2 tsp honey)
1 tsp cinnamon
1/8 tsp sea salt

Frosting 3 Tbsp almond butter (or your favorite nut butter)
1 small banana
dash cinnamon

Toppers Any fruit you want! I used 1 kiwi, sliced
4 strawberries, sliced
8 blackberries
8 grapes
½ a mango, diced

Drizzle 1 cup frozen strawberries, thawed

Preheat oven to 400 degrees. Mix your crust ingredients. Place sticky dough on a parchment paper-lined cookie sheet. Place another sheet on top and “smoosh” it out. You will want it thin, but not too thin. Bake with the top paper on for about 15-20 minutes. You will smell when it is done.

Meanwhile, make your frosting by putting your almond butter, cinnamon and banana in the food processor. Pulse until creamy, scraping the sides once. Set aside.

Rinse your food processor, and put your strawberries into the food processor. Blend until you get a “drizzly” consistency.

Finally, prep your fruits. When your crust is cooled, frost it with the almond butter mixture, leaving about a 1 cm border. Decorate with the fruit slices as artistically as your heart desires! Drizzle liberally with the strawberry glaze.

Wow, oh Wow! Where do I begin!? This was *so* incredible!! It was gorgeous, delicious, and FUN! The first thing that stikes you about this dish is its beauty. There is literally a rainbow of colors just jumping off the plate! It entices you to take a bite!

And then the flavor. What a treat!! The fruit was sweet and just bursting with juicy deliciousness! And complimenting that sweetness was the rich and nutty almond butter with a slightly spicy hint of cinnamon. And then it was rounded out by the sweet and bright strawberry drizzle….it was like a PB & J on steroids!! SO AMAZING!!!

This is such a fun twist on dessert. Or, if like me, you have it for a special lunch! It’s so healthy, with wholesome protein, and vitamins and minerals from the fruit. And what an exciting way to get your kids to eat fruit! Decorating the pizza would be a fun rainy day activity to do together!
