Mediterranean Salad

Meditteranean Salad

I was home for lunch yesterday and I wanted something really quick and easy to put together. I had some fresh tomatoes and cucumbers from my parent’s backyard garden on hand and I wanted to use them before they went bad. I chopped them up, opened a can of tuna and a can of black olives, added some dressing and had a wonderful Mediterranean Salad while I relaxed in the cool air-conditioning.

Mediterranean Salad
Ingredients
1 large tomato, chopped
1 medium cucumber, chopped (or seeded, peeled, and chopped if you prefer)
1 can tuna
3/4 cup small black olives
olive oil
red wine vinegar
dried oregano
dried basil
salt and pepper to taste

Combine all ingredients in a bowl. Makes 2 meal (lunch) sized servings.

I don’t have any measurements for the dressing. Salads are great because they are extremely flexible that way. Just pour and eyeball what looks good to you as far as amounts.
