I love eggs. They are so versatile, I could easily eat them every morning. Of course, every now and then I get concerned about the cholesterol. Two eggs a day for breakfast plus eggs in the SCD baked goods and that’s potentially a lot of artery clogging. So sometimes I like to lighten them up a bit. I love these light and cheesy scrambled eggs that only use one yolk and low fat farmer cheese. The addition of the cheese makes them super rich and creamy. Look how fluffy they come out! Light and Cheesy Scrambled Eggs Ingredients 1/2 tsp coconut oil or butter 1 whole egg 1 egg white 1 oz farmer cheese (2 TB) salt to taste
Bring a non-stick skillet up to medium heat. In a small bowl, beat eggs together while the skillet is heating. When the skillet is hot, melt oil in pan and add beaten eggs. Add 1 oz of farmer cheese. Stir and scramble until they reach your desired state of doneness. Season with salt to taste.
