I am not absorbing nutrients properly (protein, zinc, etc.). I seem to have malabsorption issues. How can I improve my absorpt

I have been diagnosed with celiac disease but I'm extremely careful to be gluten free (I get a bloodtest to confirm I am gluten free and I don't eat processed foods).  I have not eaten any gluten for years, yet I have low prealbumin and borderline albumin levels.  I also have been diagnosed with some vitamin/mineral deficiencies (such as zinc) even though I take good quality supplements.  I seem to have a variety of food allergy/sensitivities that results in not feeling well, headaches, upset digestion, and hives.  Although I eat less variety as the result (no dairy, corn, soy, nuts/peanuts, etc.), I still eat a variety of fruits, vegetables, meats, and rice.  I eat protein at every meal.  I take good quality probiotics as well as fish oil (@ 2000 mg).  Is there anything else you could recommend, such as l-glutamine powder that could heal my gut?

similar situation for me. I started eating a lot of spinach (glutamine magnesium b vits)

also raw cabbage juice (blended cabbage) because it has a sulphur compound i believe, that kills helico pylori bacteria (i had an ulcer too)

Green peas have a lot of zinc as well as almonds. but OYSTERS have massive amounts of zinc.  they don't taste very good tho  : 0
