I haven’t been in the mood for a heavy lunch the past few days. I’ve been eating more for breakfast so I guess it’s been keeping me satisfied longer. I’ve also been really busy with lots of work, meetings, errands, running around town kind of stuff. I’ve been putting together trail mix - dried fruits and nuts - and it’s been a great light lunch for when I’m really busy. I’ll eat it along with an apple or two and maybe a cup of tea and feel completely satisfied until dinner.
Keeping in the spirit of Halloween I made an orange, black, and green trail mix from raisins, chopped dried apricots, and pistachios. You have to be careful with pistachios because many of them are processed with dyes and starches. If you can find plain ones, those are a nice treat. Raw pumpkin seeds are also a wonderfully ghoulish green addition to the mix.
