Easy SCD Dinner

I’ve been fooling around with Instagram lately. If you’d like to follow me, i’m ComfyTummy on Instagram also. For a little while, I was posting photos of everything that I ate because I wanted to be more conscious of exactly what and how much I was eating. It definitely helped with that regard. I can be prone to mindless eating and stress eating. One day, I was sitting in front of my computer at my desk at work and I was eating muffins. I had three tiny muffins in front of me. I remember biting into the first muffin and then the next thing I knew, I looked down and all three muffins were gone. I didn’t even remember eating the other two! But I did. I knew that wasn’t good, so I thought photographing everything that I was eating would make me more mindful and it did because it made me stop and really look at what I was eating before I ate it.

The photo above is an easy SCD dinner that I made one night. It’s simply some grilled steak, some green beans sauteed in butter and garlic, and some fresh salsa. It was so simple and so yummy. When on the SCD, it’s always good to keep to following components in the house at all times:

Clean protein that can be quickly grilled (I like to use my Cuisinart Griddler for that)
Lean steak, chicken breasts, fish fillets, boneless pork chops, etc.

Frozen or fresh vegetables that can be quickly sauteed or steamed.
Green beans, peas, carrots, broccoli, cauliflower, etc.

Fresh mild salsa or homemade salsa.
Salsa goes with so many different dishes, especially grilled meats, and it’s really healthy when it’s fresh and made with chunky bits of fruits and vegetables. It’s usually pretty easy to find fresh salsa that is SCD friendly in the refrigerated section of most supermarkets. Avoid salsas that are in jars and not in the refrigerated section as most tend to have added sugars, and are really just a thin, sad attempt at salsa.
