The side dish that was suggest to accompany the Thai Chicken Drumsticks in Every Day With Rachael Ray was a Cilantro Cucumber Salad. I had several cucumbers in my refrigerator from my parents garden, so I thought the recipe would put them to good use. It was a nice change from the typical yogurt-based cucumber salads that I’m used to. This one was much lighter and brighter with the use of lime juice and fresh cilantro, and was a brilliant green color from the fresh herbs.
Cilantro Cucumber Salad Ingredients
2 cucumbers, peeled, halved lengthwise, and thinly sliced.
1/3 bunch cilantro
juice of 1 lime
salt and pepper to taste
Place cut cucumbers in a large bowl with a lid. In a food processor, puree the cilantro and lime juice. Add to the cucumbers and stir to combine. Add salt and pepper to taste. Serve chilled.
