Chili Farmer’s Cheese Cakes

These were so good! I was watching Top Chef Masters and Chef Mary Sue Milliken had made Chili Cottage Cheese Cake Meuniere . The judges couldn’t get over how a lowly cottage cheese cake could taste so delicious. I decided I wanted to try them out with dry curd cottage cheese aka farmer’s (or farmer) cheese and see if I could adjust the recipe for the Specific Carbohydrate Diet. I made some substitutions and I was happy with the results. They were quick and easy to make, soft, moist, flavorful and satisfying.

Chili Farmer’s Cheese Cakes
Ingredients
1 cup farmers cheese (dry curd cottage cheese)
1/4 cup red bell pepper, finely chopped
3/4 tsp sweet paprika
1/4 tsp cayenne
salt and pepper to taste
1/3 cup almond meal/flour
1 medium egg, beaten
1 TB butter

In a small bowl mix cottage cheese, bell pepper, and spices. Stir in the almond flour and the egg. Heat a saute pan over medium heat. Add 1 TB butter to fry cakes in.

Now, unfortunately, since I can’t find my notes about the recipe, I can’t remember if I shaped the mixture into patties and then fried them or if I spooned the mixture into the saute pan and made them with a pancake method. So if the mixture is firmer, shape them into patties and then fry. But if it’s a looser mixture, spoon the batter into cakes in the saute pan.

Brown lightly on both sides. Serve warm (these were good cold too). Drizzle with honey for a bit of sweetness. Excellent alone or as a side dish.
