Chard Stems

I walked into Whole Foods last week or so and they had beautiful bunches of Organic Rainbow Chard on sale for $1.69. They looked so pretty I just couldn’t pass up that deal. I ended up sauteing the leaves in some oil and garlic and eating them that way. I wasn’t sure what do to with the stems. Many recipes online say to discard the stems and throw them away, but then I found a recipe for Chard Stems. The recipe sounded good and I’ve never had chard stems before, so I thought I would give it a try. I was really surprised at how sweet they were after they were baked. They were almost like a sweet celery. The recipe originally called for Parmesan Cheese to be sprinkled on the chard stems before they baked, but I didn’t have any cheese on hand, so I just used some olive oil.

Baked Chard Stems
Ingredients
1 bunch chard stems, cleaned and cut into pieces
olive oil
salt and pepper to taste
1/4 cup water

Preheat oven to 375. Toss chard stems with olive oil. Place in a baking dish. Sprinkle with salt and pepper. Pour water around chard into bottom of baking dish. Cover. Bake about 15 minutes. Remove cover and bake another 15 minutes.

Makes 2 side dish servings.
