Yeah, the old low carb standard can really hit the spot when you feel like some mashed potatoes. Soft and comforting, they make a great side dish.
Cauliflower Mashed “Potatoes” Ingredients
1 bag cauliflower florets, or 1 medium head cauliflower
1/4 cup SCD yogurt
1/4 cup grated cheese (almost any kind works well)
1 TB butter
salt and pepper to taste
Steam cauliflower until soft. Drain. Mash. Mash and stir in yogurt, cheese, butter, and spices until all well combined. Serve.
