Banana Ginger Gelatin

I was in the mood for something a little different as far as my gelatin was concerned this past week so I decided to try some banana gelatin. I’m happy to say that it came out really good. I added a little ginger to it just to give it a little bit of extra flavor excitement.

Banana Ginger Gelatin
Ingredients
1 banana
1/4 tsp ground ginger
1 tsp honey
1 package unflavored gelatin
water

I like to use a 2 cup pyrex glass measuring cup to make gelatin since measurement are pre-marked and I don’t have to dirty any measuring cups, but any bowl or spouted bowl would do just as well. Set a kettle to boil, mash banana in bowl until most chunks are gone. Add 1/4 cup water, ginger, honey and combine. Sprinkle gelatin onto banana mixture and let sit until water boils. Add 1 cup just boiled water to the banana mixture. Stir until all gelatin is dissolved. Pour into 4 custard cups and refrigerate until set. Or leave in bowl and refrigerate until set.

Makes 4 1/2 cup servings
