I had made these a few months ago but just found the photo on one of my cameras so I thought I would post it.
I was in the mood for dessert, but not something terribly sweet. I didn’t have much in my house food-wise, but I did have some pears, some dried figs, and some pine nuts. I thought maybe they would work well together, so I gave it a try. They were good. I’m sure the recipe could be tweaked to make them a bit better, but I’ll share it anyway…
Baked Pears With Toasted Pine Nut And Fig Filling Ingredients
2 pears, cut in halves with cores scooped out
1/2 cup of chopped dried figs
1/8 cup of pine nuts, coarsely chopped
2 TB honey
pinch of salt
dash of cinnamon
1/2 tsp vanilla extract
plain yogurt for topping
Heat oven to 350 degrees. Place pear halves cut side up in a shallow baking dish. In a bowl, combine figs, pine nuts, honey, salt, cinnamon, and vanilla. Stuff each pear with one quarter of the mixture. Pour a half cup to a cup of water (depends on the size of your baking dish) in the baking dish surrounding the pears. Bake for one hour or until pears are soft and cooked all the way through. Let cool slightly before topping with a large dollop of yogurt.
