Arugula Blueberry Salad With Honey Yogurt Dressing

I love baby arugula for 2 reasons. One is that large size salad bags of baby arugula are only $1.99 eash at Trader Joe’s. The second is that its bitterness goes so well with the sweetness of fruits - both dried and fresh. It really works well with berries. July is blueberry season here in NJ and local blueberries were on sale everywhere. So I was buying quite a lot of them. One day I decided to toss some into an arugula salad and see how it tasted. It made for a nice salad. A change of pace for berry season.
Argula Blueberry Salad with Honey Yogurt Dressing Ingredients
a handful of baby arugula
1/2 cup of blueberries
1/4 cup of sliced almonds
1/4 cup SCD yogurt
1 TB honey
1 tsp apple cider vinegar
Toss arugula, blueberries, and almonds. In a small bowl, combine honey and vinegar then yogurt. Pour dressing over salad. Season with a pinch of salt to taste.
