Arugula And Sun-Dried Tomato Salad

I love lunches that are quick, easy, healthy, and flavorful. While it’s great to be able to plan meals and ingredients ahead, sometimes that just isn’t an option and I find myself staring into my refrigerator saying “what can I grab and throw together”? This was one of those meals. It was kind of haphazardly thrown together with some ingredients that I happened to have on hand. It was inspired by Caesar salad with its romaine lettuce, Parmesan, and anchovies, but with a Meditteranean or Southern Italian twist by the addition of some baby arugula and sun dried tomatoes.

I love mixing baby arugula with chopped romaine lettuce. The softer bitter arugula and the crispy cool romaine go together so nicely and make a really nice salad mix. A few black olives might have been a nice addition, but I didn’t have any in the house.

Arugula And Sun-Dried Tomato Salad
Ingredients
baby arugula
romaine lettuce, chopped
sun-dried tomatoes packed in oil
red wine vinegar
grated parmesan cheese
anchovies

I don’t have any amounts listed because I never measure anything when I’m making a tossed salad. For one lunch sized serving, I took a handful of chopped romaine lettuce and piled it onto a plate. I topped that with a handful of baby arugula. I added about 4 anchovy filets. In a small bowl, I combined the sun-dried tomatoes in oil with red wine vinegar to make about 1/8 cup of dressing. I poured that over the greens and then I sprinkled some parmesan cheese over everything.

It made for a nice lunch with a healthy dose of Omega 3’s from the anchovies.
