Apple Tarts

I was in the mood for something sweet and have half a bag of apples in my refrigerator so I thought I would try to put together some Apple Tarts. I dug up a recipe for tart crust online and made some yummy cinnamon apple filling to put in the tarts. They came out so tasty, I could have sat down and ate them all!

SCD Apple Tarts
Ingredients
For the tart crusts:
1 1/2 cups almond flour
1 large egg white
1 tsp SCD legal vanilla extract
1 tsp honey
1/8 tsp sea salt

For the apple filling:
1 TB butter
2 apples, peeled and finely chopped
1 TB honey
1/2 tsp cinnamon
2 TB apple cider
pinch of sea salt

Preheat oven to 325 degrees F.
To make the crust, combine all ingredients in a bowl and mix with a spoon until a very soft dough forms. Oil or butter 8 holes of a muffin pan. Divide the dough into 8 pieces and roll into balls. Flatten each one into a circle slightly bigger than the bottom of your muffin pan sections and place in the bottom each one so that they cover the bottom and slightly rise on the edges, making a small, shallow tart crust. Bake for 8 to 10 minutes until they are just starting to turn golden brown around the edges. Cool for a few minutes in the pan and they they will easily pop out with the twist of a butter knife.

To make the filling, bring a skillet up to medium heat. Add butter and apples and saute about 5 minutes or so until starting to soften and brown. Add honey, cinnamon, cider and a pinch of salt. This makes a nice sweet glaze for the apples. Cook a minute or two more until thickened. Remove from heat and fill tart shells.

Makes 8 small apple tarts. (4 servings)
