Why Can't I Do It All?

I was sad to miss church with my parents, but we always go to lunch after church and it ends up being late afternoon before I've gotten anything done. So instead I packed up the little bit I took home and got on the road around 11. I stopped by Whole Foods and picked up a few necessities- brussel sprouts, safflower oil (for veggie roasting), two packs of tempeh and a veggie tofu scramble from the hot bar!

Lunch ended up being around 1 pm and I was very hungry! I had the veggie tofu scramble from Whole Foods (it was just ok) with red bell peppers, goat cheese and turnip greens made by my grandfather.
 Also had some celery + PB before heading out to the pool with my Business Law book!

I was out for about an hour studying and enjoying the rays. I wasn't in the sun much at all last week, so it was nice to get out for a bit.

When I work out in the mornings, I tend to go low in the afternoon no matter what I do, so I had made a mental note yesterday to try having a 10g carb snack in the afternoon with no insulin and see how that worked. Unfortunately I wasn't quick enough! I was planning on having the snack around 3:30 or so, but by 2:30 I was 66, which isn't too low, but low enough to leave my heart pounding.

I hurried back from the pool and decided to go with a "free" snack instead of glucose. Pumpkin (I'm ready for fall already!) with ricotta, cocoa roast almonds and pumpkin pie spice. I couldn't find anything with about 10g carbs other than 1 cup of raw pumpkin, so I opened up a big can! You'll be seeing lots of pumpkin in the next few days. This was a great combo, but left me a little too full for the afternoon.

Since my afternoon snack was bigger than usual, I didn't eat dinner until almost 8. I studied (and wasted some time on Pinterest , which my mom just told me about). Click the link and check out the travel photos! They make me want to take a year and go around the world, Eat, Pray, Love style.

I was 128 before dinner, so I probably should have given myself some insulin for the pumpkin snack. I'll know next time. I made wild salmon in the oven and boiled brussel sprouts. Big salad with spinach, tomato, broccoli slaw, brussel sprouts, mozzarella, peanuts and salmon. The salmon wasn't the best- maybe because it had been frozen for a few months?

I watched half an episode of Glee while eating. I miss this show! Hopefully I can figure out my schedule so that I can keep up with it next season.

I went and said bye to my old roommate, who leaves on a plane for Paris today!!! I'm so jealous! I kept telling her how weird it is that I was with her right then and in less than 24 hours she would be in Paris, France. (I sound like someone who has just learned what airplanes are...)

Before bed I hung out with my roommates and chatted for an hour or so. They had some funny stories from the weekend! I should have been reading for Management class, but it's not until 6 tonight, so I'll have to fit it in to today's schedule.

Cottage cheese + Naturally More PB + sunflower seeds. One of my roommates is fascinated by what I eat and always asks "What is that?!" She said she's never tried cottage cheese before, so hopefully soon that will change. She roasted cauliflower and okra last night after seeing all my vegetable roasting. Soon we'll be eating all the same things!
