To make this delicious cobbler you need a boyfriend who has wild elderberries randomly growing on his property and will pick and clean the damn tiny things, or just use a different kind of berry. This is a ridiculously easy and delicious recipe.
1 stick of butter
1½ C sugar
1 C flour
2 tsp baking powder
¾ C milk
2½ C elderberries (or any other berry-may need to adjust sugar)
Melt butter in cake pan (I used a casserole dish). Mix together 1 cup of the sugar with the rest of the ingredients except the berries. Pour the batter over the melted butter, add the berries over the batter, sprinkle the remaining ½ cup sugar over the berries. Bake at about 300˚ F for about 45 minutes. (Note: I had 3½ C elderberries so I tweaked the recipe and needed to bake it at 350˚ for an extra 20 minutes).
