Quinoa Burgers

I tried a quinoa burger recipe {I found on Pinterest} a few nights ago for dinner and it was delicious.  I had seconds and my hubby had a third serving.  My patties were not as formed as I wanted them to be.  I like shape so circular burger patties suit me just fine.  Dropping burgers on the frying pan all haphazardly gets my panties in a bunch.

Then this morning I saw that my friend also pinned a quinoa burger recipe so I decided to marry the two recipes and make a few of my own alterations and give birth to a new quinoa burger.

So my quinoa burgers are a rather loose union of these two recipes: recipe 1 and recipe 2 .

I sometimes like my burgers bunless but you can serve this quinoa burger in a pita pocket or as a lettuce sandwich.


1 cup uncooked quinoa
1 medium carrot, I actually skipped this and substituted the pulp of my vegetable juice.
6 scallions, thinly sliced
1 can of great northern beans, rinsed, drained, and pulsed in food processor
1/4 breadcrumbs
1/2 cup cottage cheese
1 egg, lightly beaten
1 Tablespoon cumin



Bring 2 cups of water to a boil, add 1 cup of quinoa, bring back to a boil, lower heat and cook until the water is absorbed (much like rice). Set aside

You can shred a medium carrot or chop it up and pulse in food processor but since I was juicing I decided to add a handful of the pulp (today: kale, carrot, celery, beet, cucumber).

Then I rinsed the white beans and pulsed them in my mini food processor. I didn’t go crazy because I like the chunks. When finished combine with the carrots/vegetables.

Beat the egg and add the remainder of the ingredients including cooked quinoa to the mixing bowl. You could do this all in a large food processor but I don’t like being so rough with my quinoa, personal preference. I just mixed with a spoon.

Then to form those circular burger patties, I stuffed a lid of a Ball mason jar with the quinoa mixture and pressed down. You get some pretty brilliant ideas after watching other people cook. My dad had an actual burger patty ring and my father in law use a plastic lid of some sort turned into burger ring. Circles are good.

Flip it over and gently tap onto wax paper.

Fry in coconut oil, a few minutes on each side until browned and enjoy.

I gobbled these bad boys right up and stored the rest of my quinoa burger mixture in the refrigerator for later.
