Grilled PB&J

How have I not eaten a grilled peanut butter and jelly sandwich until now?  I’ve made peanut butter and jelly french toast but never have I eaten a grilled pb&j, or in this case grilled almond butter and jelly.  I’m sure everyone reading here has already experienced the mouth watering delicacy that is grilled pb&j but what a wonderful way to add some calories to an already high calorie sandwich for a CFer or a terrible way to add calories to my personal low calorie diet.  I guess it depends on how you look at it, glass half full/empty.   Sort of makes me want to break out my little banana costume and bust out in song “it’s Peanut Butter Jelly TIME!” {Ok, I don’t really own a banana costume}

Grilled PB&J

2 slices bread

nut butter (I used almond butter because I like it and because I’m sure my peanut butter loving husband finished off the pb)

jelly (For some reason I only like jam, or preserves.  What’s the difference between jam, jelly, and preserves anyway?  All I know is that I am not fond of jelly)

butter or oil to coat the sandwich (Coconut oil is our choice)

Fry it up like a grilled cheese and then enjoy the oozing peanut butter and warm jelly.  Bananas would sure taste good on this grilled peanut butter and jelly, will definitely have to add those next time.
