Today’s recipe features one of my favorite types of fish, tilapia. Tilapia is a delight to cook. For one, it’s readily available. It’s inexpensive. It cooks quickly.
Broiled tilapia with thai coconut-curry sauce is a complex mixture of flavors sure to please. Tilapia is the perfect canvas for the curry sauce. Fresh ingredients like garlic, red pepper, and green onions are the stars here, creating a visually appealing dish.
The only change I made to this recipe is to salt and pepper the fish. Pepper enhances the flavor for me. Speaking of salt, this dish would be a good one to try a coarser salt like Fleur de sel. As for the curry, this dish shines because of a particular brand of curry. Settle for nothing less than Madras curry powder. There was a time my husband would never eat curry despite the fact that I loved it. I switched to Madras and now he asks me to cook curry.
