Fresh dates are a delightful fruit of the desert. But with 60% sugar content, too many can create havoc with your blood glucose regulation. I think they should carry a ‘handle with care’ stamp! Each sweet treat contains 3g of sugar, so they’re best enjoyed just one at a time when you crave a sweet something to balance that bitter coffee.
A masticating style juicer works best for this recipe.
6 fresh dates, pitted.
2 tablespoon LSA seed mix (or ground almonds)
¼ teaspoon cinnamon
1 tablespoon flaked almonds, toasted; or raw cacao powder.
Push the pitted dates through the nut butter attachment of your juicer. Then stir the cinnamon through the seed mix/ground almonds before you push them through. The dry ingredients will ‘push’ the sticky date material completely through.
Mix well with clean hands, divide into 12 balls. Roll in the almond flakes or cacao powder and they’re ready to serve.
