It's hot and muggy weather here, so a cooling salad at lunchtime is so refreshing.
Today's combination: Char-grilled chicken thigh, finely sliced red onion, tomato, cucumber, parsley, olives. I char-grilled some thinly sliced Kipfler potato while the chicken was cooking.
Dressing is red wine vinegar and avocado oil drizzled over.
