Recipe: Winter salad of chicken and fresh market vegetables

We have a fabulous farmer's market in Murwillumbah. Each week I'm able to start off food foraging from stalls heaving with fresh produce, some organic, but uber-fresh because most was picked the day before. Today was no exception, and my fridge is full of delicious vegetables.

With what I picked up at the market, plus some chicken and some pantry staples, I was able to put together a delicious and actually warming winter salad. As you can see from the photo I'm no food stylist, but it did taste good. Here's the combination:

- Red cabbage, finely shredded

- Snow peas, finely sliced

- Capsicum strips

- Cherry tomatoes

- Parsley

- Kalamata olives

- Avocado

- Pine nuts

- Char-grilled chicken thigh, freshly cooked and sliced

- Balsamic vinegar as dressing


I could have improved this by mashing the avocado with a little lemon juice to make a creamier dressing - maybe next time.
