Fruit and nuts are always a great flavor combination. These little treats are so basic, so easy to put together – but they look so appealing in a lunchbox or on a party platter.
Ingredients: Strawberries (ideally medium to large), and nut butter. I used macadamia butter, but you could use almond butter, brazil butter or cashew nut butter instead.
Wash the strawberries. Leave the green tops on. Carefully slice through the middle of each strawberry, almost to the stem, so that the strawberry stays together but you can gently move the segments apart. Use a knife to carefully place a dab of nut butter in the middle of the berry, making a ‘sandwich’.
You could also try making ‘apple sandwiches’ or ‘pear sandwiches’ using wedges of the fruit – just dip the fruit in lemon juice first to prevent it discolouring.
