It’s great to steam fish, especially snapper and cod with its delicate flavour. Here’s a recipe to give your steamed fish a flavour boost:
Ingredients (for one)
Your fillet of fish
1 large button mushroom, sliced
1 spring onion, chopped
50g capsicum, diced
¼ teaspoon turmeric
¼ teaspoon coriander
¼ teaspoon cumin
One tablespoon chopped fresh parsley
1 tomato, diced
1 tablespoon olive oil
Steam your fish fillet while cooking this topping.
Gently fry the spices in oil until aromatic (about 30 seconds).
Add the spring onion, mushrooms and capsicum, fry gently until mushrooms are almost cooked. (a few minutes)
Add the diced tomato and a pinch of salt, continue to cook until the tomato has broken down. (A couple of minutes)
Just before serving, stir in the fresh parsley.
