Recipe: Pork & apple snack balls

These are ideal as an afternoon snack, with some vegetable sticks and a little hummus.

Ingredients:

500g free range pork mince

½ teaspoon salt

½ cup finely chopped spring onion

1 egg

Pinch dried chilli (optional)

½ teaspoon smoked paprika

Medium green apple (150g) peeled, cored and grated


Method

Mix ingredients together well.

Form into small balls (a little larger than golf balls) and shallow fry gently in olive oil. They will brown quickly due to the natural sugars in the apple, so watch them carefully. Can be frozen.
