Recipe: Mackerel steak with tomato, olive and zucchini sauce

I like to serve this with a starchy vegetable, like sweet potato, sweet corn or potato. Mackerel steak has a very rich flavour, with plenty of natural oils, so you may want to keep your portion size moderate.

Ingredients for each person:

-          Fresh mackerel steak

-          ¼ brown onion, diced

-          2 tomatoes, diced

-        one tablespoon tomato paste

-          1 small zucchini, sliced

-          6 kalamata olives


-          Make the sauce first: Saute the onion in a little olive oil, add the tomatoes, tomato paste and zucchini and simmer for 5 minutes or so. Add the olives, and taste test. You may wish to add a little salt or tomato paste. Continue to simmer gently while your fish is cooking.

-          Char-grill the mackerel steak; on the bbq is ideal. It will take only about 3 minutes each side.

-          Spoon the sauce over the fish to serve.
