Recipe: Honey and almond biscotti (grain-free and dairy-free and vegan)

This recipe was inspired by Elena's collection of biscotti recipes at Her recipes are always reliable, and delicious. A fantastic web site to visit if you're pursuing a grain-free or dairy-free diet.

This quantity makes about 14 biscotti.


1 ¼ cups almond meal

1 tablespoon arrowroot powder

¼ teaspoon bicarb soda

Pinch salt

¼ cup honey

¼ cup slivered almonds, preferably already toasted.


Mix the almond meal, arrowroot, bicarb soda and salt well.

Stir in the honey, then use your hand to mix into a ball of dough. (Or do all this in your blender).

Work in the almond slivers, and shape the dough into a log about 3cm in diameter. Place on lined baking tray.

Bake 25 minutes at 180°. Allow to cool for one hour.

Cut the log into thin slices (up to 1cm) on the diagonal with a serrated knife, and arrange the slices on a lined baking tray.

Bake another 15 minutes at 150°C. Watch carefully, as thinner slices are in danger of burning. They will crisp as they cool on a wire tray.
