Recipe: Fish cooked in a rice paper package

When you have a good stock of basics on your pantry, you can make a glamorous meal out of some very simple ingredients. This recipe just happened because I didn't think I could face a plain steamed fillet of fish, and needed to add some carbohydrates to the meal.

Ingredients per person

Fillet of white-fleshed fish, about 100g
2 large sheets of rice paper

Sauce ingredients 1 tsp sweet chilli sauce
1 tsp tamari
1 tsp oyster sauce
1 tsp lemon juice
¼ teaspoon palm sugar
¼ teaspoon sesame oil
¼ teaspoon fish sauce

To serve: Asian greens, finely sliced spring onion greens

Heat the oven to 180°C

Mix the sauce ingredients, taste, and adjust to suit what your palate prefers (more or less sweet, sour, salty)

Soak the rice paper in warm water to soften, then lay on a damp tea-towel . Place the fish fillet in the centre, and gently fold the rice paper into a parcel. Spoon a little of the sauce over the parcel.

Transfer to a lined cooking sheet and bake 20-30 minutes.

To serve, spoon the remaining sauce over the fish parcel, and serve on a bed of steamed Asian greens. Sprinkle the spring onion slices over for some extra glamour.
