Recipe: Creamy avocado salad dressing

Some salads just call for a creamy dressing - but how to create a healthy one without cream or yoghurt? Here's an avocado-based creamy salad dressing and some variations
The basic recipe (enough for two salad serves) Half an avocado
Juice of half a lemon
pinch salt

If you have a small blender, creating this dressing will take seconds. If not, you'll have to beat it for a while to create a smooth texture. Put all the ingredients into a bowl, and blend or mix until smooth. Add water to create the consistency you want.

Note: avocado is very high in fat (even though its good fat), so make sure you don't go overboard with your portion size.

Variations - try them out 
  • Mustard and honey dressing: add 1/2 teaspoon honey and 1/2 teaspoon mustard
  • Curry: add 1/2 teaspoon curry powder

Other ways to use it:
  • As a dip with a selection of raw vegetables (carrot, celery etc)
  • As a topping for a baked potato
  • As a 'sauce' for poached fresh salmon
