This makes a great lunchbox salad. If you prefer a creamy dressing, blend the avocado with some lemon juice and water to create the right consistency.
Ingredients (for one)
100g chicken, cooked and diced
½ cup cooked chick peas
1 stalk celery, sliced
½ green apple, diced
1 tablespoon finely chopped parsley
Squeeze lemon juice
1 tablespoon almond flakes, toasted
Mix the chicken, chick peas, celery, apple and parsley in a bowl. Pour over the avocado dressing (or lay the avocado slices on top and sprinkle the toasted almond flakes over it all.
