Paella with quinoa, shrimp and clams

Replacing rice with quinoa in your paella is really cool.

The result is a nuttier flavor and a more nutritious dish.

Ingredients (serves 4)

2 cups quinoa
1 chopped red union
2 chopped garlic
1 tsp olive oil
1/2 tsp saffron
3 cups vegetable broth
1 chopped red bell pepper
1 cup of frozen peas
1 lb mussels
1/2 lb peeled shrimp
2 oz white cooking wine
1 lime
salt
black pepper

Fry onions and garlic in oil. Stir in  saffron and quinoa.

Add the broth and boil 15 minuter. Add the 1 cup of frozen peas. Then boil for 5 more minutes. 

Fry the bell pepper in a different pan.

Boil the mussels in the wine.

Pour of the any left over bullion from the quinoa.

Stir in bell peppers and shrimp. Add salt and pepper to taste.

Decorate with mussels and thin slices for lime on top.
